Bread Pudding Tart with Brown Sugar Crumble (low fat & whole wheat)

Dear Barney, or Mr Stinson (Recovering Mentally Unsound human being, Whatever you prefer I call you),

You’re handsome, hot, surprising sensitive, sometimes hilariously dumb, an insult to Barney the Dinosaur (since you two share the same name), terribly rich, gorgeously well-dressed and would totally win a Girls’ Choice Award. Unfortunately, I chanced upon your patent for “back boobs”. Seeing that its an atrociously disgusting idea, I take back everything I said.

This Bread Pudding Tart enriched with cinnamon, the nuttiness of whole wheat flour, addictive crunchy brown sugar crumble and hints of apple is one of my most favorite creations. It may look not at all appealing, but be rest assured that its as flavorful as I described. Topped with custard-y vanilla goodness, its hard to resist!

Brown Sugar/Unrefined Sugar Popcorn (Vegan, Healthier Popcorn in 10 MINUTES)

Uncaramelized

In 10 minutes. And yes, it includes caramelization time.

Of course I had to make it healthier. White sugar? PPPhhhffff… please use brown! Do yourself and your friends more good!

I always feel guilty serving people unhealthy stuff (bakes laden in butter and tons of white sugar) –hence these healthy recipes I made. And I will admit it. Its not easy. Butter and sugar simply makes anything taste good. No matter how much you put.

Even popcorn. But not THIS popcorn, which is absolutely delicious without any of those.

Its so beautiful! Watching those unattractive teeney weeney hard-assed corn kernels explode into gorgeous fellas made the highlight of my day. (on the other hand, since I’m studying, anything I’m doing besides that is a ‘highlight‘)

So I want you to enjoy it with me! Its SOO easy! And much cheaper than buying those from shops and carnivals (my mum absolutely hates the ‘c’ word. She thinks it makes us sound crass. But what the heck, I love ‘c’heap stuff! :D). Most importantly, HEALTHIER!

Brown/Unrefined Sugar  Popcorn

No. of servings: Enough for 3 to share! (or 4)

Popcorn.

Ingredients

  • 3 tbsp unpopped corn kernels
  • 1 tbsp olive oil
  • 1/2 tsp salt

Directions

In a deep and heavy pot (that comes with a heavy lid), pour in the oil and shake the pot till it forms an even surface on the pot. Spread the corn kernels in a single surface on the oil (you can sprinkle them into the pot than shake it to form the single surface). Sprinke on the salt.

Cover the pot with its lid. Heat over high heat. Popping will begin soon. Keep shaking when popping is vigorous to prevent burning. When popping slows down, turn off the heat and do not remove the lid. Wait for popping to stop completely before removing the lid and transferring to the popcorn to a large metal bowl.

Caramelization

 
Ingredients

1/4 cup brown sugar/ coconut sugar / Sucanat/ black sugar (Yes, all work!)

Directions

Over medium heat in a non-stick pan, add brown sugar/ coconut sugar/ Sucanat and stir till it dissolves completely. Then turn up the heat to high and stir till the syrup boils. Add in the popcorn and stir vigorously to get all the popcorn caramellised. When evenly mixed, remove the caramellised popcorn and transfer back into the metal bowl to cool.

Optional step: Sprinkle 2 tbsp cocoa powder and 1 tsp cinnamon and mix with popcorn.
