What I Ate on Wednesday (2) WIAW

I should be getting use to this.

A total of 10 years waking up to shouting (lady of the house) and frustrated sighs (dad), the fear it always arouses… 10 years. Yep. I should have  gotten used to this.

A few years ago, I refused to get out of my room because of it. Door locked tightly. Heavy chair against the door.

The doorknob got destroyed.

6 years later, I’ve got a new doorknob. And, yes, I’m locking it again.

This WIAW was done in PI-like secretiveness. With the war brewing outside, you never know what little thing you do would get you spun into the fierce (one-sided) tongue-slashing possibly triggered by an absolutely stupid biological phenomenon called menopause.

Oh well.


(breakfast: healthy wholesome chocolate ganache in a bowl + 2 chocolate squares, lunch: Briyani- flavoured Instant Noodles with a vegan sausage accompanied by a Skinny Dark Fudgesicle (recipe soon), Dinner + snack: 4 slices thin wholewheat bread and 3 tbsp chunky peanut butter because we ran out of kaya :-()

If my home were a ‘country’, my mum (lady of the house) would be the Prime Minister, my dad assigned  Nominated Member of Parliament (because that’s the highest position the Prime Minister is willing to give), me and my brother would be err… citizens. There’s no president, because, well, presidents in Singapore have no power. So.

Chocolate Yogurt Ice-Cream (No ice-cream maker, vegan and guilt-free)

Have you ever thought about making your own ice cream?

I didn’t.

Until I did.

And it was absolutely divine.

Here’s the recipe… With a Vegan version.

Chocolate Yogurt Ice-Cream

No. of servings: 6 big ones

Ingredients

Non-Vegan

  • 300g Thick&Creamy Vanilla Yogurt
  • 1/4 cup evaporated milk
  • 1/4 cup soy milk
  • 2 tsp vanilla essence/extract
  • 5 packets sweetener (2 tsp worth each) I used my free Xylitol  samples/ 3 tbsp+ 1 tsp sugar (note: do not use stevia unless you are extremely extremely accustomed to its taste because it tastes funny with chocolate. )
  • 1/4 cup cocoa powder
  • 2 tbsp hot water

Non-Vegan

  • 300g coconut milk
  • 1/2 cup soy milk (or other non-dairy milk)
  • 2 tsp vanilla essence/extract
  • 1/8 teaspoon Xanthan gum
  • Blend above ingredients together to form ‘liquids mixture’
  • 5 packets sweetener (2 tsp worth each) I used my free Xylitol  samples/ 3 tbsp+ 1 tsp sugar (note: do not use stevia unless you are extremely extremely accustomed to its taste because it tastes funny with chocolate. )
  • 1/4 cup cocoa powder
  • 2 tbsp hot water

Add-ins: (optional)

  • Peanut butter chips,
  • white chocolate chips,
  • raisins, blueberries,
  • cookie dough,
  • macadamia nuts,
  • sliced almonds,
  • crumbled oreos/cookies,
  • etc.
(I used chocolate rice, raisins and white chocolate chips) The chocolate rice were unnoticeable after the ice cream was complete so its not recommended)


Directions

Mix liquids together except hot water. Dissolve cocoa powder and sugar in hot water and add to liquids mixture. Stir till very smooth. Mix in optional add-ins. Pour this mixture into a shallow container (but with walls high enough that nothing will spill when mixed with a electric hand mixer)

Place container in the freezer. After 45 minutes, remove mixture and stir vigorously with a hand whisk/ electric hand mixer to break up all the ice crystals that have formed. Yes! ALL!

Place container back into the freezer. And repeat the ice- crystal-breaking process. Do not have sympathy for those crystals. They’ll destroy your ice cream and that makes them EVIL! Destroy them! Get your 3/4/5 year old kid to do it if you can’t bear to. They’ll enjoy it. Trust me. I was that kid once upon a time.

The mixture will get thicker and thicker! Keep repeating the process until it reaches a super-thick consistency (or after 5 hours) and let them freeze for at least 5 hours.Patience my friend. (I only have patience when it comes to this and baking… the rewards are awesome)

Before scooping bring out of freezer for 3 minutes.

What I Ate On Wednesday (1) WIAW


Guys, I’m desperate!

I need some kind of portable sugar free lunch that won’t give me a sugar high… Feeling like running around singing silly tunes like ‘a bang,bangbangitybang, a bang bang bangitybang‘ (thanks, annoying Marshall and Barney from HIMYM) during a solemn GP lesson, made tense by an angry teacher, is neither ideal nor in any way coolOn the other hand, unknowingly tuning in and out of tutorials and lectures for some-weird-reason (I don’t know what) is no way better.

Enough of my school woes. Let’s get to the actual purpose of this post! This is my VERY FIRST time joining WIAW! I’ve seen many other bloggers do this before but never knew how to join until I found the organiser, Jennifer of Peas and Crayons, through Katie of Nutrition in a Peanut Shell.

So, here’s what I ate on Wednesday i.e. today. Have fun. Shoot, feast, post… Only on Wednesdays :D

 


1: Blueberry Wholewheat bun from DayPlus bread, 2: Non-fat Yoplait Strawberry Yogurt
3: Briyani-Flavoured Instant Noodles with vegetarian ham & cabbage (adapted from here), 4: Half a Sugar Plaited Loaf  (yeah I know… But in my defense, it was delicious!), 5: Katie’s  Starbucks Frappuccino Fudgsicles.(not in picture: 2 small red bean buns… because I felt like it)-

On a side note, the toilets in my home are undergoing major makeover and sanitation in my home is… let’s just say… ‘not-at-its-best’. Have a peep at our 1m x1m mini-toilet which my dad can barely fit into!

Basically, it has only adequate space for us to twist and turn around… and round– on the same spot– or just step onto/into (EEWW!) the toilet bowl. How fun! –NOT! I took some pictures to allow me to, in some time in the future, appreciate the beautiful, clean toilet we have (this ‘appreciation’ thing is already working! School toilets are totally my thing now. But not for long! YAY!)

PS: I think I’m getting weird… For the past 18 years of my life I’ve only every loved chocolate or coffee ice cream but I’m suddenly craving plain old vanilla. Oh no. Oh no.

Choices and an Update

A couple months ago, we had a GP (general paper) lesson about choices.

In the 21st century we have tons of things we can choose from.

We suggested examples. My friends suggested movies, music, books, stationery brands etc. And well… food.

Do you find yourself reaching for the same bowl of noodles everyday?

Do you find yourself having the same type of sandwich everyday?

Do you always cook with the same brand of oil/condiments?

Do you always choose the same sides most of the time (not all the time because sometimes the side you want runs out :-()?

Have you used the same brand of face cream for most of your life/many many years? (oops, now where did that come from….?)

Out of the hundreds of types/brands/CHOICES out there, you always prefer that choice and never want anything else.

Do you?

These are some of what I have been eating this couple of weeks (among other things)

Going on to something else now! I’m totally guilty of the things I said above! For the past 3 months, (and particularly the past few weeks) I’ve been doing the same thing everyday (studying, sleeping too little, feeling to tired to study, throwing past year papers I’d done into the trash and picking them out again with bare fingers. Okay. The last part wasn’t true. Hee. BUT I was quite close to doing it, minus the part about picking the stuff out of the trash. Eeww.) eating the same things everyday, walking the same route everyday… BORING! I. Need. Some. Baking. Back. Into. My. Life.

After ‘A’s I’m going to blog Full- Time and bake stuff everyday to experiment. Here’s a list: (all low fat/fat free & healthy!)

I can’t wait for school to end! I hate having a life built around school, around a timetable someone drew up for me. It kinda sucks.

Oh well…

Gotta stop procrastinating and get back to work! 😀

Thai Fried Instant Noodles (no oil and vegan)

Below: Me and my bro when I was 6. My brother was a sucker for superheroes… still is at 16. He went through a ‘Powerpuff Girls’ phase, a ‘Popeye’ phase (which used up tons of spinach… literally), a ‘Batman’ phase (highly irritating– he wore a Batman suit all the time and refused to changed out of it. He wore it for Chinese New Year I had half a mind to destroy it) and many more.

He doesn’t do stupid things like that anymore, though.

No Oil Thai Fried Noodles

No. of servings: 1

Ingredients

  • 1 serving of cooked instant noodles (I used non-fried Koka instant noodles)
  • 1 packet Thai Fried Rice/noodles seasoning
  • Lots of cabbage, chopped
  • 1 thick slice of mock ham, cubed
  • 3 cloves chopped garlic

Directions

Heat a non-stick pan under high heat until a few drops of water jump and sizzle on its surface.

Add garlic and let cook till fragrant. Add in 1/4 cup of water and the cabbage. Stir and let cook for 2 minutes.

Add noodles and stir fry.

Pour in seasoning and stir. Cook for 3 minutes.

DONE! Easy!
