1cup | Bread flour | 1 cup all-purpose flour + 1 tsp wheat gluten |
1 cup | Self-rising flour | 1 cup plain flour (maida) + 1 tsp. baking powder + a large pinch of or 1/4 to 1/2 tsp. salt OR 500 gm. plain flour (maida) + 1 1/2 -2 tsp. baking powder + 1 tsp. salt |
1cup | Whole Wheat Pastry Flour | 1/2 cup Whole Wheat flour + 1/2 cup pastry/cake flour |
1 tbsp | Corn Starch | 2 tbsp all-purpose flour / 2 tsp arrowroot starch |
1 tbsp | Vinegar | Lemon juice |
300g | Maltose | High Maltose Corn Syrup/ Barley Malt Syrup/ Honey/ |
1 cup | Black sugar | Sucanat/ Brown Sugar/ 1 cup white sugar + 1/4 cup molasses and decrease the liquid in recipe by 1/4 cup |
1 tsp | Baking powder | 1/4 tsp baking soda plus 1/2 teaspoon cream of tartar |
1 cup | Cream Cheese | 1 cup pureed cottage cheese / 1 cup plain yogurt, strained overnight in a cheesecloth (used in this recipe) |
1 cup | Light Cream | Evaporated milk |
1 cup | Buttermilk | (1 cup – 1 tbsp) Skim milk + 1 tbsp vinegar/ 1 cup Natural Yogurt |
