a) healthier substitutions I use when remaking unhealthy recipes

b) substitutions you can use if you don’t have a particular ingredient for my recipes

Amount Ingredient Substitution/s
1 cup Cake flour (1 cup – 2 tbsp) All Purpose flour + 2 tbsp corn flour
1cup Bread flour 1 cup all-purpose flour + 1 tsp wheat gluten
1 cup Self-rising flour 1 cup plain flour (maida) + 1 tsp. baking powder + a large pinch of or 1/4 to 1/2 tsp. salt OR 500 gm. plain flour (maida) + 1 1/2 -2 tsp. baking powder + 1 tsp. salt
1cup Whole Wheat Pastry Flour 1/2 cup Whole Wheat flour + 1/2 cup pastry/cake flour
1 tbsp Corn Starch 2 tbsp all-purpose flour / 2 tsp arrowroot starch
1 tbsp Vinegar Lemon juice
300g  Maltose High Maltose Corn Syrup/ Barley Malt Syrup/ Honey/ 
1 cup Black sugar Sucanat/ Brown Sugar/ 1 cup white sugar + 1/4 cup molasses and decrease the liquid in recipe by 1/4 cup 
1 tsp Baking powder 1/4 tsp baking soda plus 1/2 teaspoon cream of tartar
1 cup Cream Cheese 1 cup pureed cottage cheese / 1 cup plain yogurt, strained overnight in a cheesecloth (used in this recipe)
1 cup Light Cream Evaporated milk
1 cup Buttermilk (1 cup – 1 tbsp) Skim milk + 1 tbsp vinegar/ 1 cup Natural Yogurt
1 cup Vegan Buttermilk (1 cup – 1 tbsp) Non-dairy milk + 1 tbsp vinegar
1 cup  Sour Cream Natural Yogurt
1 egg Any of these:1/4 cup egg substitute
2 tbsp cornstarch
2 tbsp arrowroot flour
2 tbsp potato starch
1 heaping tbsp soy powder + 2 tbsp water
1 tbsp soy milk powder + 1 tbsp cornstarch + 2 tbsp water
1 banana = 1 egg in cakes.
1 tbsp milled flax seed and 3 tbsp water(Source)
1 cup Dark Chocolate frosting (easier option): 12.8 tbsp Syrup + 3.2 tbsp Cocoa Powder
1 ounce Unsweetened baking chocolate 3 level tbsp Cocoa Powder +1 tbsp oil/shortening
1 ounce Semi-sweet baking chocolate 3 level tbsp Cocoa Powder +1 tbsp oil/shortening + 3.5 tsp sugar
Any Dates Pitted Prunes
